  • 250 ml Pumpkin Puree
  • 100 ml Olive Oil
  • 2 Medium Eggs
  • 2-3 Tablespoons Greek Yogurt
  • 1 Teaspoon Vanilla Extract
  • 200 g Coconut Sugar
  • 250 g Flour
  • 2 Teaspoons Baking Soda
  • 1 Teaspoon Ground Ginger Spice
  • 1 Teaspoon Ground Nutmeg
  • 1 Teaspoon Ground Cinnamon
  • 1 Teaspoon Ground Allspice
  • A pinch of Salt
  • Nuts (for decorating)

Instructions:

  1. Preparation of Wet Ingredients: In a large mixing bowl, combine pumpkin puree, olive oil, eggs, Greek yogurt, and vanilla extract. Ensure to mix these ingredients well until you achieve a smooth and unified mixture.

  2. Incorporate Dry Ingredients: Gradually sift and fold in coconut sugar, flour, baking soda, ground ginger spice, ground nutmeg, ground cinnamon, and ground allspice. Don’t forget to add a pinch of salt! Mix until all ingredients are well-integrated, and there are no lumps in the batter.
