Ingredients:

1/2 cup white wine vinegar or rice vinegar

1/2 cup coconut aminos, tamari, Braggs liquid aminos, or low-sodium soy sauce

3 large Medjool dates, pitted

1 fresh garlic clove, pressed

1 tsp smoked paprika

1 fresh shallot, grated

4 fermented anchovy filets

Recipe:

1. Combine all the ingredients in a pot.
2. Place it over a low heat and, while stirring continuously, bring it to a high simmer.
3. Once nice and bubbly, take off the heat and let cool briefly.
Blend everything at a high speed until it's smooth by adding it all to the blender.
You can use a fine mesh strainer or sieve to pass the sauce through if you like.
For up to a month, store Worcestershire sauce in a sealed glass bottle in the refrigerator.
