Ingredients:

Lasagna noodles (about 9-12 sheets)

2 cups of marinara sauce

1 cup of ricotta cheese

1 cup of shredded mozzarella cheese

1/2 cup of grated Parmesan cheese

1 egg

2 cups of mixed vegetables (e.g., zucchini, bell peppers, mushrooms, spinach)

2 cloves of garlic, minced

Olive oil

Salt and pepper

Herbs (such as basil or oregano, optional)

 

Recipe: 

  1. Pre-cook Noodles: If using regular lasagna noodles, boil them according to package instructions until al dente. Drain and set aside. For no-boil noodles, skip this step.

  2. Prepare Vegetables: Chop the vegetables into bite-sized pieces. Sauté them in a pan with olive oil and minced garlic until they're soft. Season with salt, pepper, and herbs if desired. Set aside.

  3. Mix Cheeses: In a bowl, mix together the ricotta cheese, half of the mozzarella, Parmesan cheese, and an egg. Add a pinch of salt and pepper.

  4. Assemble Lasagna:

    • Spread a layer of marinara sauce at the bottom of a baking dish.
    • Place a layer of noodles over the sauce.
    • Spread a layer of the cheese mixture.
    • Add a layer of sautéed vegetables.
    • Repeat the layers (sauce, noodles, cheese, vegetables), ending with a layer of noodles. Top with the remaining marinara sauce and mozzarella cheese.
  5. Bake: Preheat your oven to 375°F (190°C). Cover the lasagna with foil and bake for 25 minutes. Then, remove the foil and bake for another 15-20 minutes until the top is golden and bubbly.

  6. Cool and Serve: Let the lasagna sit for about 10 minutes before cutting. This allows it to set and makes it easier to serve.
