Ingredients:

Starter Dough:
- 1/2 cup warm water
- 2 teaspoons yeast
- 1 cup all-purpose flour

Main Dough:
- 3 cups all-purpose flour
- 1/2 cup sugar
- 2 large eggs
- 1/2 cup unsalted butter, softened
- Zest of 1 lemon
- Zest of 1 orange
- 1 teaspoon salt
- 1 teaspoon vanilla extract

- 1 cup raisins

- Mix warm water, yeast, and 1 cup flour. Let it sit for 1 hour until it bubbles.

Mix the Dough:
- In a large bowl, combine the starter with the main dough ingredients (flour, sugar, eggs, butter, lemon zest, orange zest, salt, and vanilla extract). Knead until smooth.

- Fold in the raisins, candied orange peel, and citron.

- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 3 hours, or until it doubles in size.

Shape and Second Rise:
- Punch down the dough and shape it into a round loaf. Place it in a Panettone mold or a deep round baking tin. Let it rise again for about an hour.

- Preheat your oven to 350°F (175°C). Bake the Panettone for about 45 minutes, or until a toothpick inserted into the center comes out clean.
